These outstanding oysters are cultured in the cold pristine waters of Colville Bay at the mouth of the Souris River. The juvenile oysters spend up to five years slowly maturing into market-ready oysters.
The frigid, nutrient filled currents are consistently flushing and feeding the growing oysters, which coupled with the uniquely soft, silty bottom creates the ideal environment for growing a fine plumpy oyster.
The oysters get their distinctive aqua-green shell from being farmed close to the ocean surface. This also gives the oyster their briny, crispy clean taste of the ocean.
The Colville Bay oysters are carefully harvested, graded and packed by hand.
