Eel Lake oysters, also known as Ruisseau oysters, are cultured in floating bags within the clean cold waters of Eel Lake. The Atlantic currents provide a refreshing ocean taste and perfectly balanced salinity to this plump delicious oyster.
The greenish tinted shell is thick and heavy, giving the oyster a rustic healthy look and a high meat yield.
Stories on Eel Lake oysters have been published in Chronicle Herald (July 2007), Toronto Globe & Mail (September 2007) and On Air (May 2008).
