Process :
Everything begins at sea, where thousands of collector bags are spread. The small scallop larvaes will settle in these bags, allowing themselves to pour all their energy into their growth.
After a year at sea, the young scallops will then be sorted and put back into floating lanterns, where they will continue to grow in selected zones near the shores. After their first year, the scallops' shell length is approximatly 10 mm. It will still require at least 3-4 years of growth until it can be commercialized ; it will then have a shell length of approximatly 60 mm.
